General Guidelines for Canned Goods Entries:

1. Use Clean standard size canning jars that are not chipped or broken. It is best to use jars that are marked "Ball," "Mason," "Kerr," etc. so that there is no question of it being a standard canning jar. Mayonnaise or other jars are unacceptable as they can cause inadequate heat penetration during the processing and an unsafe product may be the result.

2. Use new lids to make sure they are sealed properly. Fancy padded lids, fabric over wraps or cozies interfere with the judging process and should not be used.

3. Use clean rust-free rings that are not bent or misshapen.

4. Make sure you fill the jar properly and leave proper headspace. Usually up to the rim of the jar neck, but products have different recommendations. Make sure you follow the recommendations for that product. Lima beans and poultry need a little more headspace. Jams, jellies, fruit juices and tomato sauce require less headspace. Filling the jar to full can compromise the seal and cause excessive darkening. Liquid should cover the product to prevent darkening with a balance of solids to liquid. There should be no floating of the product. There should be a minimum amount of air bubbles. Too much headspace may mean excessive air has remained in the jar which can lead to darkening and reduced vacuum level. It is also a waste of jar space which can reduce the quality.

5. Appearance should be neat and attractive, product uniform in size with product holding its shape, good natural coloring, having good texture and density and be free of cloudiness and sediment. It should also be free of bruises, blemishes, decayed spots, sunburn spots, insect damage, foreign particles, seeds, pits, peel, root hairs or vegetable stems.

6. Have the name of the product and date canned clearly marked on it. This may be on a self-adhesive label or written on the jar lid. Products canned over one (1) year are disqualified.
